Taiwanese celebrity chef Andre Chiang announced last month that he plans to close his two-Michelin-star Restaurant Andre in Singapore next February. He said he would give back the Michelin stars and return to Taiwan. The latest news is that Chiang will launch a new restaurant in China's Sichuan province, famed for its fiery cuisine. The restaurant in the Sichuan capital of Chengdu is to be called The Bridge and Chiang has been invited to be its creative and culinary director. The new restaurant will have its grand opening at the end of the year.
On his thoughts about the new endeavor, Chiang said it will not be as simple as planning any Chinese restaurant. He said he hopes to relearn the roots of Chinese culture and discover the soul and DNA of Sichuan cooking. He said he plans to use ingredients from what nature offers locally. He aims to use the five senses � sight, smell, touch, taste and hearing � to bring out a totally new culinary art.
Chiang said he hopes to incorporate his many years of experience in international cuisine to share his philosophy and outlook for new Sichuan dishes. Chiang said he hopes to present Sichuan ingredients and dishes on the international stage.
